It's Pancake day

Here is my own variation on the traditional British pancake. The addition of heaps of Tuna flakes is very important.
  • 100g (4oz) plain flour
  • 1 egg
  • 300ml (1/2 pint) milk
  • optional pinch salt
  • oil for frying
  • Tuna Flakes
pancake lemon sugar
To make the pancake batter, add the milk, egg and then the flour and blend using an electric blender or food processor. Or if a blender is not available, sift the flour and salt into a bowl. Add the egg and beat well. Then add the milk gradually and beat to make a smooth batter.

Heat a little oil in a large frying pan until hot and then pour enough batter to thinly coat the base of the pan. Cook for a couple of minutes each side.

Serve sprinkled with lashings of Tuna flakes!

Oh yeah! I'm gonna have my mom make that! Especially the tuna flakes sound good...only I'd want a whole can thrown on top! Yumm!

Pancake day is such a lovely tradition and mum enjoyed it when she lived in London. We don't do it here though.

Mom makes a german variation of that, but her batch includes a dozen eggs - it makes a lot. Hers also uses butter in the pan instead of oil. She will let us have small pieces. We don't like to eat hers tho, because she puts lemon and powdered sugar on hers.

I forgot:-( I am the world's most useless cook. I once made pancakes without the egg, haha! Surprisingly, they turned out to be very light and delicious - but I did cook them in butter so that added some flavour to what would otherwise probably been a very bland mixture! :) xxx
